Our Story

Javier Canales, a native of Honduras, moved to Austin, Texas at the age of 15 to seek new adventures and opportunities. After starting his career as a dishwasher, Javier's passion for creating unique food and beverage dishes was ignited. With hard work and dedication, he rose through the ranks to become an executive chef at renowned restaurants throughout Austin, including Abels on the lake, El Arroyo, El Alma, Alcomar, and Jack Allens, where he enjoyed creative freedom in his dishes.

Javier's passion for creating unique culinary experiences led him to partner with local breweries and distilleries to create pop-up events. These events featured multi-course menus that utilized seasonal and locally sourced ingredients. Javier's wife, Laken Cade, also has a deep passion for the food and beverage industry. Originally from the South Texas coastal bend with generational roots in Alabama, Laken pursued a career in the restaurant industry and quickly found her niche in catering.

The ambitious couple integrated both of their cultures to create something special - a fusion of Honduran and Texan cuisine that is now known as "Texatracho". The name is a combination of the nickname for a Honduran, "Catracho", and their combined love of Texas. Through their unique blend of flavors and warm southern hospitality, Texatracho brings people together to enjoy remarkable food experiences.
